Recipe Box: Movie Edition

There are so many good choices for snacks at the movies. Cookie Dough Bites, Sno Caps, M&Ms, so many different, mouthwatering types of candies. Soft Pretzels with Nacho Cheese, Hot Dogs, Pizza... I think it is also safe to say that many people’s go to favorite movie snack is popcorn, be it plain, buttered, cheddar, chocolate… ok now that my mouth is watering maybe I should just get to my recipe for this issue.

I find one of the best go to choices—of course with also having different sorts of popcorn available—for hosting a movie night with a ton of friends is a Nacho Bar.

The best part about this recipe is there are only two requirements that you HAVE to have and the rest is up to you of what you would like to include:

Nacho Chips and melted Nacho Cheese Sauce! (more about how to melt the sauce for the best results later).

You just need to make sure there is enough for everyone, which will really depend on the size of your movie night! Although, I am of the opinion the more the better because you can never have enough Nachos and Cheese with a variety of toppings!

Some of my favorite toppings to include are: Sour Cream, Olives, Chopped Onions, Jalapenos, Chopped Tomatoes, Chili, Grilled Chicken Pieces, Grilled Steak Pieces, Assorted Veggies, Guacamole, Beans, Salsa, a choice of fish (Shrimp, Salmon, etc. Many are great and just depends on your favorite), and Assorted Sauces. The brilliant part about all these toppings is that you can also use whatever recipes you want with them. Want to add some spices to the chicken? Go for it! Some sauce to the veggies? Why not?

This list of toppings gives everyone a wide variety to choose that will leave them satisfied. Now as I mentioned before I would include my preferred way for heating a large amount of nacho cheese.

Before you make the cheese you will likely want to prepare whatever toppings that you may want and put the stuff in the fridge to keep chilled or in the oven to keep warm as you make the cheese sauce.

Ingredients:
1 box of easy melt cheese
1 pkg of taco seasonings
1 small can of nacho jalapeno slices w/ juice (optional)
1/2 cup to 3/4 cup whole milk
1 can of Rotel (optional)
(You may need to play with the amounts based on how much cheese you want)

Instructions:
1. In a slow cooker add one box of easy melt cheese in cubes and Rotel.
2. Once it has melted a good bit, add to the cheese sauce some of the taco seasoning (for more flavor) and jalapenos and 2-3 teaspoons of the juice. (optional).
3. Stir together then add just enough milk to make cheese creamy, but not runny.

And there you have it, a Nacho Bar with great cheese and your choice of toppings, ready to enjoy!
